Braised Courgettes


2 lb/1000 g courgettes
3 tbsp oil
3 cloves of garlic
3 onions
a little cumin
a little mint
paprika powder
4 tbsp rice
2 cups stock
juice of 1 lemon
2 eggs
Cooking time about 40 minutes
Approx 200 kcal = 837 kj


Wash the courgettes, cut off both ends and slice. Place in the moistened RÖMERTOPF. Sprinkle with salt. Heat the oil in a frying pan and fry the chopped onions and the chopped garlic until soft, add to the courgettes. Season with salt and pepper, sprinkle with the rice and the herbs and pour in the stock. Close the lid. Just before serving, mix the lemon juice and the eggs and season with salt. Blend with the vegetables - they still need to be very hot at this stage - and serve immediately.
