Leeks

Ingredients:

2 1/2lb/1200 g leeks
salt
2 egg yolks
4fl oz/100 g soured cream
juice of 1/2 lemon
freshly ground pepper
a little grated nutmeg
zest of an untreated lemon
2 tbsp unsalted butter
Cooking time about 30 minutes
Approx 200 kcal = 837 kj


Preparation:

Prepare the leeks; wash the light parts thouroughly and cut into 1 1/2 in/3 cm pieces. Blanch in a little salted water for 5´minutes, drain thouroughly. Put the leeks in the moistened RÖMERTOPF, mix all other ingredients and pour over the leeks. Close the lid.
